Ingredients

• 1Tbsp oil
• 3 Chillis
• 1 small onion (diced)
• 2 Cloves of garlic
• 1/2 cup Peanut Butter
• 1 Cup coconut milk
• 5 Tbsp Kecap manis*
• ½ Tbsp soy sauce
• ½ tsp salt
• 1 Tbsp lime juice
• 1/2 cup chopped peanuts

Heat 1 Tbsp oil in a pan and add 3 chillis, 1 small onion (diced) and 2 cloves of garlic. Cook for approx. 3 mins on med-high heat.

Add ½ cup peanut butter (smooth or crunchy), 1 cup coconut milk, 5 Tbsp Kecap manis*, ½ Tbsp soy sauce, and ½ tsp salt.

Reduce to medium heat and simmer for 10 mins, stirring occasionally.

Using a stick blender puree the sauce to ensure the onion and garlic is all mixed through.

Stir through 1 Tbsp lime juice and ½ cup chopped peanuts, then allow to cool slightly (as the sauce will thicken).

*Kecap manis is a sweet soy sauce found in the soy sauce section of your supermarket.
