This is so simple and delicious!
- 4 Kumara
- Olive Oil
- 4 cloves of Garlic
- Big bunch of Kale
- Salt for seasoning
- 2 Tbsp Almond butter
- 2 Tbsp Lemon Juice
- 2 Tbsp Maple Syrup
Cut Kumara in half and then cook in an oven until soft. Use a fork to fluff up the insides
Heat 2 Tbsp olive oil, 4 cloves garlic and 1 big bunch of kale in a frypan over medium heat – cook for 3-4 mins. Sprinkle ½ tsp salt over the kale as it is cooking.
To make the dressing, stir together 2 Tbsp almond butter, 2 Tbsp lemon juice, 2 Tbsp maple syrup, 2 Tbsp. Add extra olive oil if needed to get the consistency thin enough to drizzle.
Dollop all together – drizzle the dressing over the kumara, top with garlicky kale and then also more dressing if required.
